Yellow Pulao

A spiced pulao with tomatoes, peas, and warming masalas, finished with ketchup.

Ingredients

  • 1½ bowls rice (soak 15–20 minutes)
  • 2 tomatoes
  • 2 onions
  • 1 bowl peas
  • 200 g peas (vatana)
  • 4–5 green chilies
  • 2 cardamoms
  • red chili powder (listed as chili powder)
  • 1 tsp garam masala
  • salt (added after water)
  • ghee (added during cooking and also used for tempering)
  • cumin (jeera)
  • turmeric powder
  • coriander powder (dhania masala)
  • ketchup
  • water (amount not specified)

Instructions

  1. Heat ghee; add cumin, cardamom, and green chilies.
  2. Add onion and sauté until well sautéed.
  3. Add tomatoes, mix, and sauté.
  4. Add peas/vatana and all masalas except salt; sauté and cook for 7–8 minutes.
  5. Add rice and sauté slowly.
  6. Add ghee, then add water and salt.
  7. Cook in a cooker.
