Uttapa (Rawa and Channa Flour, Vegetable)

A savory uttapa-style batter made from rawa and channa flour soaked in sour buttermilk, mixed with grated vegetables and aromatics.

Ingredients

  • 2 cups rawa (semolina)
  • 1 large tbsp channa flour (besan)
  • sour buttermilk (for soaking batter)
  • salt
  • cabbage (grated)
  • carrot (grated)
  • capsicum
  • onions
  • dudhi (bottle gourd)
  • tomatoes
  • ginger-chillies (added to batter)
  • pepper powder (optional)
  • jeera (cumin) powder (optional)

Instructions

  1. Mix 2 cups rawa and 1 large tbsp channa flour.
  2. Soak the mixture in sour buttermilk for 1/2 hour.
  3. Add salt.
  4. Add grated cabbage, carrot, capsicum, onions, dudhi, and tomatoes.
  5. Add ginger-chillies.
  6. Optionally add pepper and jeera powders.

Tips

  • You can also add pepper & jeera powders.
