Tomato Curry (No Onion)
A simple tomato-based curry made without onions, finished with a little sugar to balance acidity.
Ingredients
- oil (for tempering)
- mustard seeds (for tempering)
- cumin (for tempering)
- asafoetida (hing; for tempering)
- tomatoes (ratio note: '1 onion = 3 tomatoes' (no onion used))
- turmeric (masala)
- red chili powder (masala)
- coriander powder (masala)
- sugar (a little; added at the end)
Instructions
- Heat oil and add mustard seeds, cumin, and asafoetida; fry (temper).
- Add tomatoes (using the note that 1 onion is equivalent to 3 tomatoes) and cook.
- Add turmeric, red chili powder, and coriander powder; cook until masala is fried.
- Finish by adding a little sugar.
