Tomato Curry (No Onion)

A simple tomato-based curry made without onions, finished with a little sugar to balance acidity.

Ingredients

  • oil (for tempering)
  • mustard seeds (for tempering)
  • cumin (for tempering)
  • asafoetida (hing; for tempering)
  • tomatoes (ratio note: '1 onion = 3 tomatoes' (no onion used))
  • turmeric (masala)
  • red chili powder (masala)
  • coriander powder (masala)
  • sugar (a little; added at the end)

Instructions

  1. Heat oil and add mustard seeds, cumin, and asafoetida; fry (temper).
  2. Add tomatoes (using the note that 1 onion is equivalent to 3 tomatoes) and cook.
  3. Add turmeric, red chili powder, and coriander powder; cook until masala is fried.
  4. Finish by adding a little sugar.
