Sprouted Moong (Ankurit Moong)

Ankurit Moong

Overnight-sprouted moong boiled and tempered in oil, then seasoned with spices; a simple nourishing preparation.

Ingredients

  • 3/4 cup moong (soaked and sprouted overnight)
  • 2–3 green chilies
  • red chili powder
  • salt
  • turmeric
  • coriander-cumin powder
  • sugar (a little)
  • 2 tsp oil (for tempering)

Instructions

  1. Soak the moong in the evening and keep it to sprout overnight.
  2. Boil the sprouted moong until cooked.
  3. Heat oil (about 2 tsp) and add tempering (not specified beyond oil).
  4. Add the boiled sprouts and add red chili powder, salt, turmeric, coriander-cumin powder, and a little sugar.
  5. Bring to a boil and serve.

Tips

  • Variation: Same as above, but do not add green chilies.
