Shrikhand

A sweetened yogurt dessert made by dissolving sugar in ghee and mixing it into yogurt, then chilling until set.

Ingredients

  • 250 g yogurt (dahi) (same as shrikhand recipe)
  • 200 g sugar (same as shrikhand recipe)
  • 2 tsp ghee (same as shrikhand recipe)
  • sesame seeds (roasted; add first)

Instructions

  1. Warm the ghee on low flame and add sugar.
  2. When the sugar dissolves, remove from heat.
  3. Add yogurt and mix well.
  4. Beat/mix until smooth.
  5. Refrigerate to set.
  6. If too thick, mix in a little milk/water and refrigerate again.

Tips

  • If shrikhand becomes too thick, loosen with a little milk or water and refrigerate again.
