Toor dal cooked and combined with sautéed mixed vegetables, finished with a spiced tadka and tamarind pulp.

Ingredients

  • 1 cup Toovar dal (toor dal)
  • Dudhi (bottle gourd) (chopped vegetables)
  • Drum stick (vegetable)
  • Onions (chopped)
  • Tomatoes (chopped)
  • Brinjal (eggplant) (chopped)
  • Oil (mixed with ghee for sautéing)
  • Ghee (mixed with oil for sautéing)
  • Jeera (cumin seeds) (for vegetable tempering)
  • Hing (asafoetida) (for vegetable tempering and dal seasoning)
  • Haldi (turmeric) (added after vegetables cook)
  • Salt
  • Garam masala (added after vegetables cook)
  • Cinnamon (for dal seasoning)
  • Cloves (for dal seasoning)
  • Rai (mustard seeds) (for dal seasoning)
  • Dry red whole chillies (for dal seasoning)
  • Curry leaves (for dal seasoning)
  • Red chilli (for dal seasoning (form not specified))
  • 1 spoon Amli pulp (tamarind pulp)

Instructions

  1. Boil the toovar dal and mix it well.
  2. In an oil and ghee mixture, add jeera and hing; add all chopped vegetables and cook.
  3. After vegetables are cooked, add haldi, salt, and garam masala to the vegetables.
  4. Prepare dal seasoning (tadka): in fat, add cinnamon, cloves, rai, jeera, dry red whole chillies, and hing.
  5. Add curry leaves, salt, haldi, red chilli, and amli pulp; boil this mixture.
  6. Add the sautéed vegetables into the dal and mix.
