Ingredients
- 1 cup toovar dal
- dudhi (bottle gourd)
- drumstick
- onions (chopped)
- tomatoes (chopped)
- brinjal (eggplant) (chopped)
- oil (mixed with ghee for sautéing veg)
- ghee (mixed with oil)
- cumin seeds (jeera) (used in veg sautéing; also in dal tempering)
- asafoetida (hing) (used in veg sautéing; also in dal tempering)
- turmeric (haldi) (added after veg are cooked; also mentioned for dal)
- salt (for dal and veg)
- garam masala (added after veg are cooked)
- cinnamon (for dal tempering)
- cloves (for dal tempering)
- mustard seeds (rai) (for dal tempering)
- whole dry red chillies (for dal tempering)
- curry leaves (added after tempering)
- red chilli (powder) (as written)
- 1 spoon amli pulp (tamarind pulp)
Instructions
- Boil the toovar dal and mix it well.
- In an oil and ghee mixture, add cumin seeds and hing; add all chopped vegetables and cook until vegetables are cooked.
- After vegetables are cooked, add turmeric, salt, and garam masala to the vegetables.
- Prepare a tempering for the dal: add cinnamon, cloves, mustard seeds, cumin seeds, whole dry red chillies, and hing.
- Add curry leaves, salt, turmeric, red chilli, and amli pulp (1 spoon) to the dal; boil.
- Add the sautéed vegetables to the boiled, seasoned dal.
