A South Indian lentil-and-vegetable stew flavored with sambar powder and finished with a mustard-hing tempering.
Ingredients
- 1 cup tuvar/arhar dal (pigeon peas)
- 1 brinjal (eggplant) (chopped)
- 2 drumsticks (cut into long pieces)
- okra (as available, chopped)
- potatoes (as available, chopped)
- 2 tomatoes
- sambar powder
- red chilli powder
- salt
- turmeric
- water (as needed for cooking/boiling)
- oil (for tempering)
- mustard seeds (for tempering)
- asafoetida (hing) (for tempering)
Instructions
- Cook the dal and mash it.
- Cook the vegetables, adding water as needed.
- Add tomatoes, sambar powder, turmeric, red chilli powder, and salt.
- Add the cooked mashed dal and bring to a boil.
- Prepare tempering: heat oil, add mustard seeds and hing.
- Pour the tempering into the sambar.
