Sambhar

A South Indian lentil-and-vegetable stew flavored with sambar powder and finished with a mustard-hing tempering.

Ingredients

  • 1 cup tuvar/arhar dal (pigeon peas)
  • 1 brinjal (eggplant) (chopped)
  • 2 drumsticks (cut into long pieces)
  • okra (as available, chopped)
  • potatoes (as available, chopped)
  • 2 tomatoes
  • sambar powder
  • red chilli powder
  • salt
  • turmeric
  • water (as needed for cooking/boiling)
  • oil (for tempering)
  • mustard seeds (for tempering)
  • asafoetida (hing) (for tempering)

Instructions

  1. Cook the dal and mash it.
  2. Cook the vegetables, adding water as needed.
  3. Add tomatoes, sambar powder, turmeric, red chilli powder, and salt.
  4. Add the cooked mashed dal and bring to a boil.
  5. Prepare tempering: heat oil, add mustard seeds and hing.
  6. Pour the tempering into the sambar.
