Raw Dhokla (Rawa Dhokla)

A steamed semolina (rawa) dhokla made by soaking rawa in sour buttermilk, then aerating with baking soda and finishing with a mustard-curry leaf-sesame tempering.

Ingredients

  • rawa (semolina)
  • sour buttermilk (for soaking)
  • ginger
  • green chillies
  • salt
  • oil (heated with water)
  • water (heated with oil)
  • soda bi-carb (baking soda)
  • rai (mustard seeds) (for seasoning/tempering)
  • curry leaves (for seasoning/tempering)
  • til (sesame seeds) (for seasoning/tempering)
  • fresh coriander (cilantro) (garnish)
  • fresh coconut (garnish)

Instructions

  1. Soak rawa in sour buttermilk for at least 1/2 hour.
  2. Add ginger, green chillies, and salt to the batter.
  3. Heat oil and water together; when it starts boiling, add soda bi-carb and immediately add it into the batter.
  4. Prepare a seasoning/tempering with rai, curry leaves, and til and add it.
  5. Top with fresh coriander and fresh coconut.
