Potatoes cooked with spices into a gravy, finished with jaggery and tamarind added after the potatoes are cooked.

Ingredients

  • potatoes
  • garlic
  • jaggery (gol) (add later)
  • tamarind (add later)
  • chilli powder
  • turmeric
  • coriander powder
  • salt (to taste)
  • oil (for tempering (vaghar))
  • mustard (for tempering (vaghar))
  • cumin (for tempering (vaghar))
  • asafoetida (for tempering (vaghar))

Instructions

  1. Wash and cut the potatoes.
  2. Chop all the masalas except jaggery and tamarind.
  3. Cook the potatoes with the spices.
  4. After the potatoes are cooked, add jaggery and tamarind.

Tips

  • Add jaggery and tamarind only after the potatoes are cooked.
