Rajma (Spiced Kidney Beans with Yogurt)

Rajma

Soaked kidney beans boiled with a little baking soda, then cooked with onions and spices and finished with yogurt.

Ingredients

  • rajma (kidney beans) (soak overnight; boil in morning)
  • soda / bi-carb (a little; add while boiling)
  • oil
  • hing (asafoetida)
  • onions (fried)
  • haldi (turmeric)
  • salt
  • red chilli powder
  • garam masala
  • dahi (yogurt) (add after spices)

Instructions

  1. Soak rajma overnight.
  2. Boil in the morning, adding a little soda/bi-carb while boiling.
  3. Fry onions in oil with hing.
  4. Add the boiled rajma to the onions.
  5. Add haldi, salt, red chilli powder, and garam masala.
  6. Add some dahi.
