Potato sabzi with a sweet-sour gravy made by adding jaggery and tamarind after the potatoes cook.
Ingredients
- potatoes (washed and cut)
- garlic
- jaggery (gol) (add after potatoes are cooked)
- tamarind (add after potatoes are cooked)
- chilli powder
- turmeric
- coriander powder
- salt (to taste)
- oil (for tempering (vaghar))
- mustard seeds (for tempering (vaghar))
- cumin seeds (for tempering (vaghar))
- asafoetida (hing) (for tempering (vaghar))
Instructions
- Wash and cut the potatoes.
- Chop/prepare all masalas except jaggery and tamarind and cook the potatoes with spices.
- After the potatoes are cooked, add jaggery and tamarind and mix.
