Potatoes in Tamarind-Jaggery Gravy

Potato sabzi with a sweet-sour gravy made by adding jaggery and tamarind after the potatoes cook.

Ingredients

  • potatoes (washed and cut)
  • garlic
  • jaggery (gol) (add after potatoes are cooked)
  • tamarind (add after potatoes are cooked)
  • chilli powder
  • turmeric
  • coriander powder
  • salt (to taste)
  • oil (for tempering (vaghar))
  • mustard seeds (for tempering (vaghar))
  • cumin seeds (for tempering (vaghar))
  • asafoetida (hing) (for tempering (vaghar))

Instructions

  1. Wash and cut the potatoes.
  2. Chop/prepare all masalas except jaggery and tamarind and cook the potatoes with spices.
  3. After the potatoes are cooked, add jaggery and tamarind and mix.
