Palak Vada
Crisp fried vadas made from mixed flours, onions, ginger, chilies, and lemon juice.
Ingredients
- 1/2 cup gram flour (besan)
- 1/2 cup rice flour
- 1/2 cup chickpea flour (chana flour) (listed separately from besan as written)
- 1 tbsp ginger paste
- 4 pieces onions (chopped)
- green chilies (chopped)
- coriander (chopped)
- red chili powder
- salt
- turmeric
- baking soda
- about 4 tbsp lemon juice (from 2 lemons)
- oil (for frying)
- water (add as needed to make batter (just before frying))
Instructions
- Mix spices and a little oil together.
- Add green chili, salt, lemon juice, and baking soda; mix well.
- Add ginger and chopped onion; mix.
- Just before frying, add water as needed to make a batter.
- Fry vadas in hot oil.
Tips
- For a smaller quantity, reduce green chili, ginger, etc. accordingly.
- If making half quantity, make the batter accordingly.
