Palak Vada

Crisp fried vadas made from mixed flours, onions, ginger, chilies, and lemon juice.

Ingredients

  • 1/2 cup gram flour (besan)
  • 1/2 cup rice flour
  • 1/2 cup chickpea flour (chana flour) (listed separately from besan as written)
  • 1 tbsp ginger paste
  • 4 pieces onions (chopped)
  • green chilies (chopped)
  • coriander (chopped)
  • red chili powder
  • salt
  • turmeric
  • baking soda
  • about 4 tbsp lemon juice (from 2 lemons)
  • oil (for frying)
  • water (add as needed to make batter (just before frying))

Instructions

  1. Mix spices and a little oil together.
  2. Add green chili, salt, lemon juice, and baking soda; mix well.
  3. Add ginger and chopped onion; mix.
  4. Just before frying, add water as needed to make a batter.
  5. Fry vadas in hot oil.

Tips

  • For a smaller quantity, reduce green chili, ginger, etc. accordingly.
  • If making half quantity, make the batter accordingly.
