Onion-Potato Vegetable

Kanda Batata Nu Shaak

A simple Gujarati sabzi of onions and potatoes cooked with mustard tempering, ginger, green chilies, and spices.

Ingredients

  • 4–5 pieces potatoes
  • 3 pieces onions
  • 4 pieces green chilies
  • garam masala (listed twice; includes 1 tsp at end)
  • potato spices (batana masala)
  • cloves
  • black pepper
  • turmeric (haldi)
  • coriander-cumin powder (dhaniya-jeeru)
  • 2 tsp chickpea flour (besan)
  • 2 tsp oil
  • 2 tsp tamarind (use as tamarind water; added last)
  • water (add to boil and to make tamarind water)

Instructions

  1. Heat oil; add onions (and other aromatics as written) and sauté.
  2. Add potatoes, turmeric, chickpea flour, and potato masala; sauté.
  3. Add besan and other spices; sauté.
  4. Add water and boil.
  5. Add tamarind water at the end and finish the potato vegetable.
