Mixed Vegetable Sabzi
A simple mixed vegetable preparation cooked with jeera-hing tempering and basic spices, finished with masalas and optional coconut and ginger-chilli-garlic paste.
Ingredients
- cauliflower (big pieces)
- capsicum (bell pepper)
- potatoes
- onions
- peas
- tomatoes
- oil (proper amount)
- cumin seeds (jeera)
- asafoetida (hing)
- turmeric (haldi)
- salt
- sugar
- red chilli powder
- garam masala
- coriander
- coconut
- ginger-chilli-garlic paste (optional)
- water (placed on lid as described)
Instructions
- Cut vegetables into big pieces (as indicated for cauliflower).
- Heat oil; add cumin seeds and hing.
- Add all vegetables.
- Add turmeric, salt, and sugar; cover with a lid with some water on it and cook on slow gas until vegetables are cooked.
- Add red chilli powder, garam masala, coriander, and coconut.
- Optionally add ginger-chilli-garlic paste.
Tips
- Cook covered on low heat with water placed on the lid (as described).
- Ginger-chilli-garlic paste is optional.
