Mixed Vegetable Sabzi

A simple mixed vegetable preparation cooked with jeera-hing tempering and basic spices, finished with masalas and optional coconut and ginger-chilli-garlic paste.

Ingredients

  • cauliflower (big pieces)
  • capsicum (bell pepper)
  • potatoes
  • onions
  • peas
  • tomatoes
  • oil (proper amount)
  • cumin seeds (jeera)
  • asafoetida (hing)
  • turmeric (haldi)
  • salt
  • sugar
  • red chilli powder
  • garam masala
  • coriander
  • coconut
  • ginger-chilli-garlic paste (optional)
  • water (placed on lid as described)

Instructions

  1. Cut vegetables into big pieces (as indicated for cauliflower).
  2. Heat oil; add cumin seeds and hing.
  3. Add all vegetables.
  4. Add turmeric, salt, and sugar; cover with a lid with some water on it and cook on slow gas until vegetables are cooked.
  5. Add red chilli powder, garam masala, coriander, and coconut.
  6. Optionally add ginger-chilli-garlic paste.

Tips

  • Cook covered on low heat with water placed on the lid (as described).
  • Ginger-chilli-garlic paste is optional.
