Kimi Aunty’s Large Potatoes

Tempered potato preparation with onions, green chilies, garlic, lemon, and ajwain; optional dry coconut.

Ingredients

  • 4 pieces onions
  • 2–3 pieces green chilies
  • garlic
  • 4 pieces potatoes (note: title says '6 Large Potatoes' but ingredient list states 4 potatoes)
  • salt
  • lemon (juice)
  • ajwain (carom seeds)
  • turmeric (mentioned in method)
  • dry coconut (optional; grated)
  • 2 tsp oil (for tempering)
  • mustard seeds (for tempering)
  • cumin seeds (for tempering)

Instructions

  1. Mix potatoes with salt, turmeric, lemon, and ajwain.
  2. Heat 2 tsp oil; add mustard seeds and cumin seeds.
  3. Add onions and (optional) grated dry coconut; sauté.
  4. Add green chilies and garlic; sauté.
  5. Add the potatoes; mix and cook.
  6. Stir in the tempering and serve.
