Khichu (Aloo) - Fried Coarse Urad Dal Snack

Soaked urad dal is coarsely ground with ginger, tempered with spices, and fried until crisp.

Ingredients

  • urad dal (soaked 8–10 hours)
  • ginger paste
  • oil (for tempering/frying)
  • jeera (cumin)
  • hing (asafoetida)
  • haldi (turmeric)
  • salt
  • red chilli powder

Instructions

  1. Soak urad dal for 8–10 hours.
  2. Discard the remaining soaking water.
  3. Grind the dal coarsely and mix in ginger paste.
  4. Heat oil; add jeera and hing.
  5. Add haldi, salt, and red chilli powder.
  6. Add the ground dal mixture and fry until crisp.
