Instant Dhokla
Quick steamed besan dhokla leavened with Eno/citric acid and finished with a sweet-salty tempering water.
Ingredients
- 2 bowls chana flour (besan)
- 1/2 bowl rava/semolina or rice flour
- salt
- 1 tsp sugar
- 1 tsp Eno fruit salt or citric acid
- 1 tsp baking soda
- oil
- water (for batter)
- mustard seeds (for tempering)
- hing (asafoetida) (for tempering)
- curry leaves (for tempering)
- 1/2 cup water (for tempering water)
- 1 tsp sugar (for tempering water)
- coriander leaves (to decorate)
- lemon (to decorate)
Instructions
- Mix besan, rava/rice flour, salt, sugar, and water to make a smooth batter.
- Add Eno fruit salt and mix.
- Grease the dhokla plate/tray.
- Steam the batter in the greased plate until set (steaming time not specified).
- Prepare tempering water: in 1/2 cup water add 1 tsp sugar, mustard seeds, hing, curry leaves, and oil.
- Pour the tempering water over the steamed dhokla.
- Cut into pieces and serve, garnished with coriander and lemon.
