Instant Dhokla

Quick steamed besan dhokla leavened with Eno/citric acid and finished with a sweet-salty tempering water.

Ingredients

  • 2 bowls chana flour (besan)
  • 1/2 bowl rava/semolina or rice flour
  • salt
  • 1 tsp sugar
  • 1 tsp Eno fruit salt or citric acid
  • 1 tsp baking soda
  • oil
  • water (for batter)
  • mustard seeds (for tempering)
  • hing (asafoetida) (for tempering)
  • curry leaves (for tempering)
  • 1/2 cup water (for tempering water)
  • 1 tsp sugar (for tempering water)
  • coriander leaves (to decorate)
  • lemon (to decorate)

Instructions

  1. Mix besan, rava/rice flour, salt, sugar, and water to make a smooth batter.
  2. Add Eno fruit salt and mix.
  3. Grease the dhokla plate/tray.
  4. Steam the batter in the greased plate until set (steaming time not specified).
  5. Prepare tempering water: in 1/2 cup water add 1 tsp sugar, mustard seeds, hing, curry leaves, and oil.
  6. Pour the tempering water over the steamed dhokla.
  7. Cut into pieces and serve, garnished with coriander and lemon.
