Idli Mixture
A steamed idli-like batter made from rice flour and maida with spices and curd, rested then steamed on medium heat.
Ingredients
- 3 bowls rice flour
- 1 kg maida (refined flour) (or mixed/joined flour (as written))
- garlic paste
- salt
- turmeric (haldi)
- hing (asafoetida)
- 2 tsp sugar
- 2 tsp curd (yogurt)
- oil (a little, as required; plus for greasing)
- water (as needed for batter)
Instructions
- Mix maida and all spices into the flour.
- Mix in the curd.
- Add water as needed to make a batter.
- Cover and rest the batter.
- Grease a plate and pour in the batter.
- Steam on medium heat until cooked.
- Remove and let cool slightly before serving.
