Idli Mixture

A steamed idli-like batter made from rice flour and maida with spices and curd, rested then steamed on medium heat.

Ingredients

  • 3 bowls rice flour
  • 1 kg maida (refined flour) (or mixed/joined flour (as written))
  • garlic paste
  • salt
  • turmeric (haldi)
  • hing (asafoetida)
  • 2 tsp sugar
  • 2 tsp curd (yogurt)
  • oil (a little, as required; plus for greasing)
  • water (as needed for batter)

Instructions

  1. Mix maida and all spices into the flour.
  2. Mix in the curd.
  3. Add water as needed to make a batter.
  4. Cover and rest the batter.
  5. Grease a plate and pour in the batter.
  6. Steam on medium heat until cooked.
  7. Remove and let cool slightly before serving.
