Dry Potato Stir-fry (Sukhi Batata Bhaji)

Sukhi Batata Bhaji

Dry-style potato sabzi tempered with urad dal, cumin, curry leaves, and green chillies, finished with lemon juice.

Ingredients

  • 1/2 kg potatoes
  • curry leaves
  • urad dal
  • cumin seeds (jeera)
  • salt
  • lemon (use juice)
  • sugar
  • turmeric (haldi)
  • 2-3 green chillies
  • oil (for tempering/cooking)
  • water (a little; placed on lid as described)

Instructions

  1. Heat oil; add urad dal and let it fry briefly.
  2. Add cumin seeds, then add curry leaves and green chillies (as described).
  3. Add potatoes, turmeric, sugar, and salt; cook.
  4. Cover with a lid; place water on the lid and cook on slow gas (low heat) until potatoes are done.
  5. Finish by adding lemon juice.
