Dahi Vada

Soft fried urad-dal dumplings soaked in water, then served in curd/yogurt with sweet chutney and chili powder.

Ingredients

  • 250 gm Urad dal (soaked)
  • Salt (to taste)
  • 3–4 Green chillies
  • Oil (for frying)
  • Water (for soaking fried vadas)
  • Curd/yogurt (for serving)
  • Sweet chutney (to top)
  • Red chilli powder (to top)

Instructions

  1. Soak urad dal for 2–3 hours.
  2. Grind soaked dal with green chilies and salt, using minimal water.
  3. Whip the batter well.
  4. Heat oil and fry small vadas until cooked.
  5. Soak fried vadas in water; after 5 minutes, squeeze out the water.
  6. Place vadas into curd/yogurt.
  7. Top with sweet chutney and red chilli powder.

Tips

  • Do not add too much water while grinding.
  • Whip the batter well for lighter vadas.
