Cold Salad (Tomato, Capsicum & Yogurt)

Chilled salad of peeled, de-seeded tomatoes and thinly sliced capsicum mixed with salted thickened yogurt and peanuts (optionally coconut).

Ingredients

  • Tomatoes (boiled briefly, peeled, de-seeded, cut in long slices)
  • Capsicum (cut thin)
  • Dahi (yogurt) (tied in a muslin cloth for some time (to thicken))
  • Salt
  • Roasted peanuts
  • Grated fresh coconut (optional)
  • Coriander (for garnish)

Instructions

  1. Cut capsicum thin.
  2. Prepare tomatoes: make a cross mark on the bottom of each tomato, boil water, add tomatoes briefly (do not overboil), remove and put in cold water, then peel.
  3. De-seed peeled tomatoes and cut into long slices.
  4. Combine tomatoes and capsicum in a bowl.
  5. Add salt, roasted peanuts, and thickened (hung) dahi; mix well.
  6. Optionally add grated fresh coconut.
  7. Garnish with coriander and serve chilled.

Tips

  • Do not keep tomatoes in boiling water for long, otherwise they will get cooked from inside.
  • You can also put grated fresh coconut.
