Chole

A chickpea curry cooked with onion-tomato base, ginger-garlic paste, and warming spices including bay leaves and garam masala.

Ingredients

  • 2 cups kabuli chana (chickpeas) (soaked overnight)
  • 3 onions
  • 3 tomatoes
  • 4 potatoes
  • ginger
  • 6–7 cloves garlic
  • 1 tsp red chili powder
  • cumin
  • coriander powder
  • turmeric
  • salt
  • 6–7 bay leaves
  • garam masala
  • oil
  • green chilies (included in paste with ginger/garlic/onion; quantity not specified)
  • chickpea flour (besan) (optional; 'if needed' add a little)

Instructions

  1. Cook/boil the soaked chickpeas (chana).
  2. Make a paste of ginger, garlic, chilies, and onions.
  3. Heat oil and sauté this paste.
  4. Add tomato paste.
  5. If needed, add a little besan.
  6. Add all masalas.
  7. Add the boiled chana and cook.
