Chevdo (Poha Chivda)

Chevdo

A large-batch Gujarati poha chevdo/chivda with fried peanuts, sev, coconut slices, curry leaves, and lemon juice.

Ingredients

  • 1/2 kg thin poha (flattened rice)
  • 200 g sev (gathiya)
  • 900 g peanuts
  • 900 g dry coconut slices
  • 4 pieces lemons (juice)
  • 8–10 leaves curry leaves
  • 2 tsp turmeric powder
  • 1/2 tsp asafoetida (hing)
  • 2 tsp sugar
  • salt (to taste)
  • 1/2 bowl oil (as needed for frying)

Instructions

  1. Sun-dry the poha for 4–5 hours.
  2. Heat oil and fry peanuts until done; remove.
  3. Fry curry leaves; remove.
  4. Fry sev (gathiya); remove.
  5. Fry dry coconut slices until lightly golden; remove.
  6. In a large bowl, mix turmeric, hing, sugar, and salt. Add all fried items and mix thoroughly.
  7. Add lemon juice, mix well, and keep covered for about 90 minutes.
  8. Mix again and store.
