Chevdo
A large-batch Gujarati poha chevdo/chivda with fried peanuts, sev, coconut slices, curry leaves, and lemon juice.
Ingredients
- 1/2 kg thin poha (flattened rice)
- 200 g sev (gathiya)
- 900 g peanuts
- 900 g dry coconut slices
- 4 pieces lemons (juice)
- 8–10 leaves curry leaves
- 2 tsp turmeric powder
- 1/2 tsp asafoetida (hing)
- 2 tsp sugar
- salt (to taste)
- 1/2 bowl oil (as needed for frying)
Instructions
- Sun-dry the poha for 4–5 hours.
- Heat oil and fry peanuts until done; remove.
- Fry curry leaves; remove.
- Fry sev (gathiya); remove.
- Fry dry coconut slices until lightly golden; remove.
- In a large bowl, mix turmeric, hing, sugar, and salt. Add all fried items and mix thoroughly.
- Add lemon juice, mix well, and keep covered for about 90 minutes.
- Mix again and store.
