Cabbage, Peas, and Potato Sabzi

Kobi Bataka

Cabbage cooked with potatoes and boiled green peas, tempered with cumin and hing, lightly sweetened and spiced.

Ingredients

  • 1/2 kg cauliflower
  • 1/4 kg potatoes
  • 100 gms green peas
  • oil
  • cumin seeds (jeera)
  • asafoetida (hing)
  • turmeric (haldi)
  • sugar (omit if using ginger-garlic-chilli paste)
  • salt
  • red chilli powder
  • garam masala
  • coriander-cumin powder (dhania-jeera) (a little)
  • tomatoes (optional; chopped)
  • ginger-garlic-chilli paste (optional; added at the end)

Instructions

  1. Heat oil; add cumin seeds and hing.
  2. Add potatoes and peas, then add cauliflower.
  3. Add turmeric, sugar, and salt; cover and cook on low gas until done.
  4. Add red chilli powder, garam masala, and a little dhania-jeera.
  5. Optionally add chopped tomatoes.
  6. Optionally add ginger-garlic-chilli paste and chopped tomatoes at the end; if adding this paste, do not add sugar.

Tips

  • Chopped tomatoes can be added.
  • Ginger-garlic-chilli paste can be added at the end; if using it, omit sugar.
