Brinjal–Potato Stuffed Puri
Deep-fried puris stuffed with a spiced brinjal and potato mixture flavored with coconut, tamarind, and lemon.
Ingredients
- 200 g brinjal (eggplant)
- 3 pieces potatoes
- 1/2 bowl coconut (grated)
- 4 tsp coriander powder
- 1 tsp red chilli powder
- 1 tsp salt (to taste)
- tamarind (imli) pulp (as needed)
- 3 tsp oil (for cooking stuffing (deep-frying oil not specified))
- 1/2 piece lemon (juice)
- water (as needed)
Instructions
- Wash brinjal and potatoes, cut into pieces, and pressure cook with a little water for 2 whistles.
- Coarsely mash and set aside.
- Heat oil in a pan; add the boiled brinjal–potato mixture and sauté.
- Add coriander powder, red chilli powder, salt, grated coconut, and tamarind pulp; mix well.
- Cook until the mixture becomes dry enough for stuffing.
- Turn off the flame and add lemon juice.
- Cool the stuffing before filling puris.
