Brinjal–Potato Stuffed Puri

Deep-fried puris stuffed with a spiced brinjal and potato mixture flavored with coconut, tamarind, and lemon.

Ingredients

  • 200 g brinjal (eggplant)
  • 3 pieces potatoes
  • 1/2 bowl coconut (grated)
  • 4 tsp coriander powder
  • 1 tsp red chilli powder
  • 1 tsp salt (to taste)
  • tamarind (imli) pulp (as needed)
  • 3 tsp oil (for cooking stuffing (deep-frying oil not specified))
  • 1/2 piece lemon (juice)
  • water (as needed)

Instructions

  1. Wash brinjal and potatoes, cut into pieces, and pressure cook with a little water for 2 whistles.
  2. Coarsely mash and set aside.
  3. Heat oil in a pan; add the boiled brinjal–potato mixture and sauté.
  4. Add coriander powder, red chilli powder, salt, grated coconut, and tamarind pulp; mix well.
  5. Cook until the mixture becomes dry enough for stuffing.
  6. Turn off the flame and add lemon juice.
  7. Cool the stuffing before filling puris.
