Bhindi (Okra) with Potatoes

Bhinda

Okra and potatoes cooked with hing and spices, optionally finished with tomatoes, coconut, or ginger-chilli-garlic paste.

Ingredients

  • 1/2 kg okra (bhindi/bhinda)
  • 1/4 potatoes (amount as written; unit not specified)
  • oil
  • asafoetida (hing)
  • turmeric (haldi)
  • lemon juice
  • salt
  • red chilli powder
  • coriander-cumin powder (dhania-jeera powder)
  • ginger-chilli-garlic paste (optional)
  • tomatoes (optional; add after masalas)
  • grated coconut (optional)

Instructions

  1. Heat oil and add hing.
  2. Add bhindi and turmeric and lemon juice; fry for some time.
  3. Add potatoes, cover, and cook on slow gas (low heat) until cooked.
  4. Add salt, red chilli powder, and dhania-jeera powder.
  5. Optionally add ginger-chilli-garlic paste.
  6. Optionally add tomatoes after adding all masala.
  7. Optionally add grated coconut.

Tips

  • Tomatoes are added after all masalas.
  • Grated coconut can be added.
  • Ginger-chilli-garlic paste is optional.
