Okra and potatoes cooked with hing and spices, optionally finished with tomatoes, coconut, or ginger-chilli-garlic paste.
Ingredients
- 1/2 kg okra (bhindi/bhinda)
- 1/4 potatoes (amount as written; unit not specified)
- oil
- asafoetida (hing)
- turmeric (haldi)
- lemon juice
- salt
- red chilli powder
- coriander-cumin powder (dhania-jeera powder)
- ginger-chilli-garlic paste (optional)
- tomatoes (optional; add after masalas)
- grated coconut (optional)
Instructions
- Heat oil and add hing.
- Add bhindi and turmeric and lemon juice; fry for some time.
- Add potatoes, cover, and cook on slow gas (low heat) until cooked.
- Add salt, red chilli powder, and dhania-jeera powder.
- Optionally add ginger-chilli-garlic paste.
- Optionally add tomatoes after adding all masala.
- Optionally add grated coconut.
