Batata Vada

Spiced mashed-potato balls (vada filling) typically coated in besan batter and fried; this text includes the potato filling and batter mix.

Ingredients

  • 1/2 kg Potatoes (boiled and mashed)
  • 1 Lemon
  • 3–4 Green chillies
  • Coriander leaves
  • Onion (finely chopped)
  • Ginger-garlic paste
  • 2 tsp Whole masala (khada masala)
  • 2 small spoons Garam masala
  • 1/2 vati Besan (gram flour) (for batter)
  • Onion (chopped; for batter)
  • Red chilli powder (for batter)
  • Salt (for filling and batter; to taste)
  • Garam masala (for batter)
  • Asafoetida (hing) (for batter)
  • Water (as needed to make batter)

Instructions

  1. Boil the potatoes and mash them.
  2. Add lemon, green chilies, coriander leaves, finely chopped onion, ginger-garlic paste, whole masala, garam masala, and salt; mix well.
  3. Shape the mixture into balls.
  4. For the besan batter: mix besan with chopped onion, red chilli powder, salt, garam masala, and hing; add water as needed to form a batter.
