Batata Vada
Spiced mashed-potato balls (vada filling) typically coated in besan batter and fried; this text includes the potato filling and batter mix.
Ingredients
- 1/2 kg Potatoes (boiled and mashed)
- 1 Lemon
- 3–4 Green chillies
- Coriander leaves
- Onion (finely chopped)
- Ginger-garlic paste
- 2 tsp Whole masala (khada masala)
- 2 small spoons Garam masala
- 1/2 vati Besan (gram flour) (for batter)
- Onion (chopped; for batter)
- Red chilli powder (for batter)
- Salt (for filling and batter; to taste)
- Garam masala (for batter)
- Asafoetida (hing) (for batter)
- Water (as needed to make batter)
Instructions
- Boil the potatoes and mash them.
- Add lemon, green chilies, coriander leaves, finely chopped onion, ginger-garlic paste, whole masala, garam masala, and salt; mix well.
- Shape the mixture into balls.
- For the besan batter: mix besan with chopped onion, red chilli powder, salt, garam masala, and hing; add water as needed to form a batter.
