Aloo Methi
Boiled potatoes cooked with garlic, green chilies, and fresh methi leaves, lightly tempered and simmered until flavorful.
Ingredients
- oil (for tempering)
- cumin (for tempering)
- garlic (cut pieces)
- potatoes
- methi leaves (fenugreek leaves)
- onion (fried)
- tomatoes (according to taste)
- turmeric (added after adding methi)
- red chili powder (added after adding methi)
- coriander powder (added after adding methi)
Instructions
- Heat oil and add cumin for tempering.
- Add cut pieces of garlic, then add potatoes and methi leaves.
- Fry onion, then add potatoes and methi and cook.
- After some time, add tomatoes according to taste.
- After adding methi, add turmeric, red chili powder, and coriander powder (no garam masala).
- Cook for 10–15 minutes.
Tips
- Do not add garam masala (as noted).
