Aloo Methi (Potato with Fenugreek Leaves)

Aloo Methi

Boiled potatoes cooked with garlic, green chilies, and fresh methi leaves, lightly tempered and simmered until flavorful.

Ingredients

  • oil (for tempering)
  • cumin (for tempering)
  • garlic (cut pieces)
  • potatoes
  • methi leaves (fenugreek leaves)
  • onion (fried)
  • tomatoes (according to taste)
  • turmeric (added after adding methi)
  • red chili powder (added after adding methi)
  • coriander powder (added after adding methi)

Instructions

  1. Heat oil and add cumin for tempering.
  2. Add cut pieces of garlic, then add potatoes and methi leaves.
  3. Fry onion, then add potatoes and methi and cook.
  4. After some time, add tomatoes according to taste.
  5. After adding methi, add turmeric, red chili powder, and coriander powder (no garam masala).
  6. Cook for 10–15 minutes.

Tips

  • Do not add garam masala (as noted).
